What if you could turn your morning oatmeal into an on the go snack for any time of the day? Aronia berries are like a tart blueberry but native & can be grown in zones 3-8. Aronia berries are high in vitamin C and to have significantly more antioxidant properties than most fruit. Fun fact: The photo is of the batter as the cookies were not around long enough to photograph! :)

Ingredients:

- 1/2 c butter
- 1 c brown sugar
- 1 egg
- 1 t vanilla extract
- 1 1/2 c rolled oats
- 1 c flour
- 1 1/2 t cinnamon
- 1/4 t salt
- 1/2 t baking powder
- 1/4 t baking soda
- 1 cup of Refreshing Red Cabbage Microgreens from HAMAMA
- 1 c Aronia berries


 

Instructions:

 

  1. Preheat oven to 350˚F. Lightly grease a baking sheet.
  2. In a large mixing bowl, cream the butter and brown sugar. Beat in the egg and vanilla extract. In a separate bowl, mix together the oats, flour, cinnamon, salt, baking soda, and baking powder. Add the oat mixture to the butter mixture and stir just until incorporated. Fold in the Aronia berries.
  3. Drop by heaping teaspoonful onto the prepared baking sheet. Bake for 12-14 minutes, until golden-brown. Cool on a wire rack for 5-10 minutes.
