Butternut Squash Soup

Makes: Serves 4-6

Around the holidays, I always get hungry before the holiday feast. This year, I've prepared myself by finding the perfect warm and delicious soup to have as an appetizer to the festivities. Or, it makes for a great appetizer or palate cleanser for your holiday meal.

Ingredients:

  • 2 pounds butternut squash, peeled, seeded, and diced
  • 2 tablespoons butter
  • 1 onion, chopped
  • 4-6 cups of chicken or vegetable broth
  • salt and pepper
  • nutmeg
  • microgreens (broccoli and kale are awesome for this!)

Instructions:

  1. Sauté chopped onions in butter until translucent
  2. Add diced squash cubes and cover with broth, bring to a boil and lower heat to simmer
  3. Once squash will break apart with a fork (about 15 minutes), remove with a slotted spoon into blender
  4. Blend all ingredients until nice and smooth
  5. Add in broth from pot until its consistency is to your liking
  6. Salt, pepper, and nutmeg to taste
  7. Top with your choice of garnish
  8. Serve warm
