Cucumber Noodles on Watermelon

Made this salad before with cucumber noodles, arugula, basil and mint. Dressed it in lime, olive oil, agave, salt and chili powder. Dumped it all on chilled and salted watermelon wedges.  🍃❤️

Ingredients:

 

  •  1 large seedless English cucumber
  •  3 cups cubed watermelon 1/2-inch pieces
  •  1/3 cup crumbled feta cheese
  •  1/4 cup fresh mint leaves  thinly sliced (or Refreshing Cabbage Microgreens)
  •  Juice of 1 lime
  • 2 Sprigs of basil (or 1 Seed Quilt of Super Salad Mix Microgreens)

 

 

Instructions:

 

  1. Use n spiralizer to create the cucumber noodles. Place noodles in a large bowl. Add the watermelon cubes, feta cheese, and mint. Squeeze fresh lime juice over the salad. Serve immediately.
  2. Note-you can add a little chopped red onion if you wish. I leave it out for our boys:)
