Who doesn’t love a good summer cookout? This easy black bean and corn salad is sweet, salty, hearty and the perfect addition to your summer get-together! Enhanced with Hamama Earthy Clover microgreens to take the flavor to the next level - plus the added boost of healthy nutrients! You can enjoy this salad as a standalone side dish or serve up with some crunchy blue corn tortilla chips! Tip: Swap the Earthy Clover for our Spicy Daikon Radish Microgreens if you want a little kick! 

 

Ingredients: 

  • 1 can of black beans, drained & rinsed
  • 1 can of sweet corn, drained
  • 1 can of garbanzo beans, drained & rinsed
  • ½ cup red onion, diced
  • 1 yellow bell pepper, diced
  • ½ cup cherry tomatoes, sliced in half
  • 1 avocado - optional
  • Himalayan salt - to taste
  • Freshly ground black pepper - to taste
  • 1 tablespoon of agave nectar - optional

Instructions: 
  1. Thoroughly drain and rise 1 can of black beans, 1 can garbanzos, and 1 can of sweet corn - add them to a large mixing bowl
  2. Chop ½ cup of red onion
  3. Dice 1 yellow bell pepper
  4. Slice ½ cup of cherry tomatoes in half
  5. Stir all the ingredients in your mixing bowl, add himalayan salt and freshly ground black pepper to taste. 
  6. Optional: Add in 1 tablespoon of agave nectar to enhance the sweetness of the salad.
  7. Optional: Mix in 1 avocado, sliced 
  8. Sprinkle in Hamama Earthy Clover microgreens
  9. Serve up with chips or enjoy as a side salad!
