Sesame Ginger Korean Beef with Broccoli

Get creative in the kitchen by creating quick and simple versions of your favorite restaurant meals (with all of the flavor). This meal takes less than 30 minutes from start to finish and is super budget-friendly too! Pair it with your favorite veggies (I love broccoli, peppers, and carrot slices sauteed in coconut oil with garlic slices and chili pepper flakes) a side of freshly cooked white or brown rice, and a bunch of your favorite Hamama microgreens. Ingredients: 

  • 1/4 cup brown sugar (more or less to taste) 

  • 1/4 cup reduced/low sodium soy sauce (this can get very salty otherwise!)

  • 1 tbsp sesame oil

  • 1/2 teaspoon crushed red-pepper flakes (or sriracha), more or less to taste

  • ½-1 teaspoon freshly minced ginger

  • 3 cloves garlic, minced

  • 1 pound lean ground beef

  • 2 green onions, thinly sliced

  • 1/4 teaspoon toasted sesame seeds

For serving:

  • Freshly cooked white or brown rice 

  • Your favorite veggies, sauteed or steamed (broccoli, bell peppers, carrot slices, edamame...)

 

Instructions: 

  1. In a small bowl, whisk together the brown sugar (add more or less for your desired sweetness), soy sauce, sesame oil, red pepper flakes and freshly minced ginger.

  2. Heat sesame oil in a large skillet over medium high heat. Add garlic and cook, stirring constantly, until fragrant, about 1 minute. Add ground beef and cook until browned, about 3-5 minutes, making sure to slightly crumble the beef as it cooks; drain excess fat.

  3. Stir in soy sauce mixture and green onions until well combined, allowing to simmer until heated through, about 2 minutes.

  4. Serve immediately over hot rice & garnish with more green onion, cilantro, microgreens, toasted sesame seeds and sriracha chile sauce! Pair with your favorite veggies.
