Spinach and Goat Cheese Omelette

Curious on how to use up your green onions that are regrowing from your green onion kit? This low-carb omelette fills you up and is loaded with flavor!

If you haven’t already, make sure you get your own green onion kit so you can regrow green onions again and again! It also makes the perfect holiday gift!

Ingredients:

  • 2 eggs
  • ¼ cup almond milk
  • 1 cup spinach
  • 1 - 2 tbsp goat cheese crumbles
  • 2 tbsp black olives, sliced
  • Green onion, chopped
  • Hamama Hearty Broccoli Microgreens
  • 1 tbsp coconut oil
  • Salt & pepper to taste

Instructions:

  1. Preheat skillet and add coconut oil
  2. Crack eggs into bowl, and add almond milk, some fresh cracked pepper and a little pink Himalayan salt
  3. Beat eggs and whisk all ingredients together
  4. Pour into preheated skillet and cook for a minute or two
  5. Add in goat cheese crumbles, spinach, some green onion, and olives to one half
  6. Gently fold omelette in half
  7. Transfer to plate
  8. Add more crumbled goat cheese and green onions
  9. Top with more freshly cracked black pepper and Hamama Hearty Broccoli microgreens

Tip: Mix up your ingredients and add different veggies like mushrooms, tomatoes or broccoli and you’ll have an endless amount of options to enjoy your green onions and microgreens!
