Are you having at-home cooking burnout? Let’s taco bout making a stay-at-home fiesta! Today we’re making vegan tacos al carbon with jackfruit! If you've never had jackfruit before, it's super versatile and is a great plant-based replacement for meat! Get ready to dig into this festive Mexican inspired dish featuring Hamama Hearty Broccoli microgreens! Spicy Daikon Radish is another flavor that would work great with this recipe. Grab your favorite microgreen flavors here! 🌮 

 Ingredients: 

  • 4 corn or flour tortillas, warmed
  • ¼ cup fresh cilantro, finely chopped
  • 3-4 lime wedges
  • 1 white onion, chopped
  • 1 can of Jackfruit, rinsed and drained
  • ¼ tsp chili powder
  • ¼ tsp ground cumin
  • ¼ tsp garlic powder
  • Salt and pepper to taste
  • 2 tbsp olive or grapeseed oil
  • Fresh pico de gallo (see recipe here) or your choice of salsa
  • Hamama microgreens (I’ve used Hearty Broccoli here)

Instructions:

  1. Rinse and drain jackfruit
  2. With clean hands squeeze the excess liquid out of each piece of jackfruit, set aside
  3. Heat oil in skillet over medium-high heat
  4. Add chopped onion and cook for about 3 minutes or until translucent
  5. Add in jackfruit and carefully shred in pan while heating
  6. Add chili powder, cumin and garlic powder
  7. Cook until mixture is lightly browned evenly, about 5 minutes
  8. Add salt and pepper to taste
  9. Remove from heat and fill up your warmed tortillas with jackfruit mixture
  10. Squeeze fresh lime juice and garnish with cilantro, pico de gallo or salsa, and Hamama microgreens
