Za’atar seasoning and hemp seeds make it extra colorful, healthy and delicious. It’s super nutritious and easy to whip together, making it the perfect side dish or lunch. Ingredients: 1 cup cooked amaranth 1 bunch curly parsley, finely chopped 1 cup amaranth microgreens ½ cup red onion, finely diced 2 roma tomatoes, diced 1 tbsp Za’atar 1 tbsp hemp seeds ¼ tsp salt 1 lemon, juiced ¼ cup extra virgin olive oil Instructions: Cook the amaranth according to package instructions. While the amaranth cooks, chop all of the veggies and add to a large bowl. Add in the seasoning, hemp seeds, salt, lemon juice, amaranth microgreens and olive oil and gently mix to combine. When the amaranth is fully cooled, add it to the bowl and mix well. Store the tabouli in the fridge or serve immediately and enjoy!
