This lovely pear and pecan salad will easily become a favorite Autumn recipe! It’s a lovely mix of fresh mixed greens, sweet pears, toasted nuts, salty feta cheese, and crunchy celery and apple. A perfect sharing salad to compliment any meal!

Ingredients:

  • 12-16 oz of your favorite mixed greens (Spring mix, spinach, arugula, kale)
  • ½ cup of toasted pecans or walnuts
  • ¼ cup of dried cranberries or dried cherries
  • ½ cup of celery, chopped
  • Red onion, thinly sliced to taste
  • ¼ cup of crumbled feta cheese or shaved parmesan
  • 1 ripe (but not overly ripe) pear, diced (I leave the skin on!)
  • ¼ cup of diced apple
  • ¼ cup of chopped cilantro, more or less to taste
  • Handful of your favorite Hamama Microgreens (I used Super Salad mix)
  • Raspberry Balsamic Vinaigrette - Store bought or homemade

Instructions:

  1. Make the Vinaigrette (skip if using store-bought!)
  2. Toss all ingredients together and add dressing just before serving!
