Baked Salmon with Smokey Thai Sauce & Veggies

This flavorful baked salmon is perfect for date night or even a quick weeknight dinner! All you need is a few pieces of salmon, veggies and a delicious thai sauce with a hint of chipotle to give it the ultimate flavor. Throw it in the oven and let it work its magic!

 

Ingredients:

  • 1 tbsp coconut oil
  • 3 filets of salmon
  • 1 large green bell pepper, chopped
  • 1 large onion, chopped

 

Smokey Thai Sauce:

  • 3 tbsp olive oil
  • 2 tbsp fresh ginger, minced
  • 3 tbsp hoisin sauce
  • 1 tbsp teriyaki sauce
  • 1 tbsp soy sauce
  • 2 tbsp pineapple juice
  • ½ tsp chipotle seasoning

 

Garnish:

 

 

Instructions:

  1. Preheat the oven to 350°F. Coat the bottom of a pyrex dish (or oven-safe baking dish) with coconut oil.
  2. Prepare the sauce by whisking all sauce ingredients together until well combined. 
  3. Arrange your veggies in the dish and place the salmon over top. Pour the sauce over the top.
  4. Bake for 30 minutes or until the fish is cooked through. 
  5. Serve on a plate adding any extra sauce over the top of the salmon and veggies. Garnish with green onions, microgreens of your choice and salt and pepper to taste and enjoy!
