Baked Whole Red Snapper & Veggies

Recipe: Baked Whole Red Snapper & Veggies

Makes: 4-6 Servings

This has become one of my favorite Sunday dishes! It is so simple to make and when baked in the oven, all of the flavors get cooked together creating the best taste you can get in a one pan dish. Enjoy this with your family and have leftovers for later! 

Ingredients: 

1 Whole Red Snapper

1 large Onion (Chopped into thick chunks)

6-8 cloves of Garlic (Chopped into thick chunks)

Dark Kale (two whole bunches)

Small Red Potatoes (about a half bag full to fill up the pan)

Fennel Seeds

Salt and Pepper

Thyme (Dried)

Dill (Dried)

Oregano (Dried)

Olive Oil

Masala

Instructions:

  1. Preheat your oven to 350 and get out your baking pan. I like to cover the baking pan in a little oil so the fish and veggies don’t stick too much.
  2. I place the kale in the pan first but make sure to take out the thick stem. I peel it from the stem and leave in large chunks.
  3. Next, cut your potatoes into large chunks and spread across the pan evenly over the kale.
  4. Do the same thing with the onion and garlic spreading it around the pan once chopped. (leave a few garlic chunks behind to place in the pan)
  5. I then take the fish out (I do the whole fish and make sure it is gutted and the scales are off before buying) and make 3 slits on either side of it to place the garlic in. I take my leftover pieces and put about 2 to 3 slices in each slit.
  6. Once all is ready you will want to take the olive oil, salt, pepper, oregano, thyme, dill and drizzle the oil and spices on the one side of the snapper and then place in the pan.
  7. You will then add the oil and spices to the other side of the snapper in the pan as well as all over the rest of the veggies so they get a nice coating.
    Lastly you will add the Masala and Fennel Seeds and I do a good amount to really get the juices flowing when cooking.
  8. You can apply however much oil, masala and spices you want depending on your taste. You can also change the spices if you prefer a different flavor.
  9. Once the oven is ready you will place the baking pan in and let cook for about 45 minutes to an hour.
  10. When the fix and veggies look done you will take it out and let cook for a few.
  11. Service it up on a plate with your favorite microgrogreens and enjoy!!
