Blackened Shrimp Cucumber Bites with Guac & Garlic Greens

It’s the time of year for cooking up some extra special dishes for your family and friends! This appetizer is light and refreshing and with the perfect mix of textures and flavors. You get the perfect bite from the seasoned blackened shrimp, creamy guacamole and cooling cucumber. This is a beautiful and healthy appetizer for the holidays! Just don’t forget to add in your Hamama Garlic Greens too - they make this dish extra special! :D

 

Ingredients:

  • ½ lb - 1 1b shrimp, peeled and deveined
  • 1-2 cucumbers, depending on size, cut into about ½ inch discs
  • 1 tbsp Blackened Seafood Seasoning from Frontier Co- Op, or you can use any seafood or creole seasoning
  • 1 tbsp Hamama extra virgin olive oil

Guacamole:

  • 1 avocado, smashed
  • 2 tbsp fresh cilantro, chopped finely
  • 1 tbsp Hamama garlic greens, chopped finely
  • 1 tbsp lemon or lime juice
  • 1 tsp salt

Garnish:

Instructions:

  1. Toss your peeled, deveined shrimp in the seafood seasoning and oil in a bowl until covered well.

2. Grab a medium skillet and turn the heat on to medium high. Cook the shrimp for 2-3 minutes on each side until blackened. Set aside. [These can be thrown on the grill too!]

3. For the guacamole: Take out your ingredients and chopped the herbs finely. Remove from the skin from the avocado.

4. Mix/smash all of your guacamole ingredients into your bowl and mix well until nice and smooth.

5. Chop your cucumbers next into medium size slices (thick enough to hold the shrimp up).

6. Get out your serving plate and assemble everything together: Start with the cucumber on the bottom, guacamole for the second layer and shrimp on the top. Garnish with extra fresh cilantro and garlic greens and enjoy! :D
