California Citrus Salad

Bright, fresh, sweet & tangy - this salad makes a delicious lunch or side to share. With mixed greens, creamy goat cheese, sweet & spicy pecans, fresh microgreens and a citrus vinaigrette, this salad is a party for your taste buds. Simple, beautiful and delicious! 

Ingredients:

  • About 4-5 cups of mixed greens [kale, spinach + spring mix] 
  • ¼ cup cilantro, chopped 
  • ½ cup Sweet & Spicy Pecans, more or less to taste 
  • ½ cup goat cheese, crumbled 
  • Red onion, thinly sliced, to taste 
  • Handful of Turnip Microgreens 

Citrus Dressing: 

  • 3 tbsp orange juice, freshly squeezed
  • 2 tbsp lemon juice, freshly squeezed
  • 1 clove garlic, minced
  • 1 tbsp Dijon mustard
  • 2 tbsp honey
  • 2 tbsp extra virgin olive oil
  • Pinch of salt & freshly cracked black pepper 

 

Instructions:

  1. Make the dressing: Combine ingredients except for the olive oil and mix well. Slowly add the extra virgin olive oil while whisking vigorously. Set aside until ready to use - It’ll just need a quick shake before dressing the salad.
  2. Assemble the big salad: Chop the kale if using and massage with a small drizzle of olive oil to break down the fibers a little. Toss in the rest of the greens, Layer on cilantro, goat cheese, red onion, sweet & spicy pecans and microgreens. Drizzle as much dressing on the salad as you’d like and gently toss. Serve immediately & enjoy!
