  • Bamboo Sushi Mat/Roller (You can use parchment paper instead if you can't find one)
  • Rice Cooker

Ingredients:

  • 2 cups Medium Grain Rice
  • 2 Cups of Water
  • 1 Packet of Sushi Seasoning
  • 2 Bunches of Garden Blend Microgreens
  • 1 Avocado
  • 1 Pack of Artificial Crab/Surimi
  • Sushi Nori Sheets
  • 1 Cucumber
  • Toasted Sesame Seeds

Garnish:

Instructions:

 Sushi Rice:

  1. In a large bowl, rinse the rice by slowly agitating it with your hands, constantly draining the water and refilling it. Do this several times until the water is relatively clear.
  2. Place in a rice cooker or pot and let it soak for 30 minutes. Before starting to cook, you can add a piece of kombu (optional).
  3. Once it has finished cooking, place the rice in a large bowl and gently fluff if with a rice paddle with one hand and begin to sprinkle the sushi seasoning into the rice.
  4. You'll want to use roughly 2 tbsp but you can use more or less depending on your preferences.
  5. Add the rice back into the rice cooker or pot on the warm setting and let it sit there until you are ready to use.

Sushi Filling

  1. Gather the artificial crab, avocado, and cucumber and cut them all 1-2 cm wide (matchstick size).
  2. Wrap your bamboo mat with plastic foil and place it on a counter. Take a sheet of the Seaweed Wrap(Nori) and place it the center of your roller.
  3. Dampen your hands with a little water or a damp towel. This will prevent the sushi rice from sticking to your hands while you are preparing the rolls.
  4. You will grab roughly a baseball sized amount of sushi rice from the cooker/pot and place it on the left side sheet of the Sushi Nori Sheet. Carefully spread the rice evenly across the entire sheet using the tips of your fingers.
  5. Sprinkle sesame seeds and the Garden Blend Microgreens evenly over the rice and then flip the sheet over.
  6. On the reverse side, add one piece of the crab, a single layer of avocado and some cucumber pieces across the middle of the sheet. Don't overstuff the ingredients, it could make it difficult to fully wrap it all the way around.
  7. Start the roll by pulling the bottom of the bamboo mat and slowly rolling up. As you roll up, gently press the roll all the way across to tighten everything.  Once you reach the end, flip the sushi roll onto a flat surface and place the bamboo mat on top of it. Using the mat, gently press the top and the sides of the roll.
  8. Get your knife slightly moist by wiping over the blade with a wet towel. This will prevent the roll from sticking to the blade as you're cutting it. Start by cutting the middle of the roll, then cutting those two pieces in half, and then halve those pieces again for a total of 8 pieces. Carefully place them onto a dish and you're ready to serve!
