Caprese Roasted Asparagus

This vegetable side dish is great for any occasion and takes just minutes to prepare! If you are in a rush to a party, this is the perfect dish to make & share! A little revamp on your basic roasted asparagus gives this dish a flavorful caprese salad feel and looks oh so fancy! 

Ingredients:

  • 1 lb asparagus, ends trimmed
  • 2 tbsp olive oil
  • 1 tsp salt and pepper, sprinkled over the asparagus and the tomatoes
  • 2 cups mozzarella cheese, shredded
  • 2 cups cherry tomato mix, halved

 

Garnish:

  • Balsamic glaze, store-bought or you can find the recipe here
  • Fresh basil leaves, finely chopped
  • Hamama microgreens of your choice but I recommend garlicky chives
  • Salt and pepper to taste

Instructions:

  • Preheat the oven to 400 and get out a baking pan.
  • Place the asparagus on one side of the pan and the tomatoes on the other side. Sprinkle each with salt and pepper and drizzle olive oil over them. Mix around with your hands so everything gets covered evenly.
  • Place the vegetables in the oven and cook for 5 minutes.
  • Take the pan out and top the asparagus with the mozzarella cheese. Place it back in the oven and cook until the cheese is melted.
  • Take your vegetables out and serve your asparagus on a large serving plate. Layer your cherry tomatoes over top of the asparagus and cheese and top with your balsamic glaze.
  • Lastly, garnish with fresh basil and your favorite microgreens. Eat while it’s hot and enjoy!
