Recipe: Cheesy Cauliflower Casserole

This cheesy cauliflower casserole is the perfect side dish for your Thanksgiving feast! This creamy dish also makes a great swap for mashed potatoes if you’re doing low-carb! Top with your very own homegrown green onions!
Ingredients:
- 1 head of cauliflower, chopped into florets
- ½ cup heavy cream
- 1 cup shredded cheese (I used a mix of Colby and Monterey Jack)
- 2 tbsp unsalted butter
- ¼ cup sour cream
- ¼ cup parmesan cheese
- 2 garlic cloves, minced
- ½ cup green onions, chopped
- 1 tsp sea salt
- 1 tsp fresh ground black pepper
Instructions:
- Preheat oven to 400 degrees
- Wash cauliflower and chop into florets
- Add florets to large pot and add 2 - 3 cups of water, bring to a boil
- When cauliflower is fork-tender, remove from heat and strain out water
- Return florets to the pot, and with heat on low, stir in heavy cream, parmesan cheese, sour cream, butter, and minced garlic
- Using a potato masher, carefully mash the cauliflower in the pot while combining ingredients
- Turn heat to medium-high, stir occasionally and simmer until mixture has thickened - approximately 5 minutes
- Remove from heat completely and transfer mixture to a casserole baking dish
- Bake casserole uncovered for 15 minutes or until edges are lightly browned
- While casserole is baking, clean and prepare your green onions
- Remove casserole from oven and sprinkle shredded cheese on top
- Return casserole to oven for approximately 7 - 8 minutes or until cheese is melted and lightly browned on top
- Garnish with fresh chopped green onions and serve with a dollop of sour cream if desired!
