Chicken Dumpling Soup

Warm, cozy and absolutely packed full of flavor. Your favorite chicken dumpling soup just leveled up! 

Ingredients:

For the Soup:
- Olive oil or butter (or a mix) for sauteing
- 5 large carrots, sliced on a slight angle
- 5 stalks of celery (including the leafy tops), sliced
- 4-5 cloves of garlic, crushed
- 1 medium sweet or yellow onion, large dice
- 1 rotisserie chicken, cubed (can use cooked chicken breast)
- 64 oz low sodium chicken broth (+ extra for boiling the dumplings)
- 32 oz chicken bone broth
- 2 bay leaves
- Seasoning Salt and/or Beau Monde (celery, onion and salt) to taste
- Whole Peppercorns (optional)
- 1 TBSP Bonnes Herbes seasoning or your favorite soup seasoning

For the Dumplings:
- 5 Eggs
- 2 Cups of Flour (I used all purpose Gluten Free Flour & they turn out great)!
- ¼ milk
- Pinch of sea salt

Toppings:
- Hamama Microgreens- I used Broccoli
- Bhuja Crunchy Seasoned Peas, for topping (or sub crackers of course)

Instructions:

  1. Coat a dutch oven or soup pot with olive oil or butter. I like to use both.
  2. Saute garlic, onion, carrots, celery and salt + pepper to taste on medium heat for about 10 minutes, stirring occasionally.
  3. Make the dumpling dough. In a deep pan, bring about 6 cups of water or broth (for extra flavor) to a boil and drop ½ spoonfuls of dumpling dough in the pot. The dumplings float when cooked-remove from the pan when done and continue the process until you make all of the dumplings. This can be done in the soup pot itself, but you risk overcooking your veggies this way, plus they absorb a lot of the liquid. Set finished dumplings aside. The broth can also be reserved in case you want to add more to your soup pot.
  4. To the soup pot, add broths, bay leaves, 5 whole peppercorns (I like how this seasons the soup but you can skip), & other seasonings.
  5. Bring ingredients to a simmer until the veggies are tender to your liking- add chicken and reserved dumplings and remove from heat. Remove bay leaves.
  6. Ready to serve! I love topping with Broccoli Microgreens (Super Salad or Zesty would also be great) and bhuja crunchy seasoned peas (Gluten free)! I also threw on avocado slices because I put avocado on everything!
