Author: Carolyn Severin, Hamama Success Team Member Prep Time: 15 minutes Cook Time: 30 minutes Makes: 4-6 servings These mushroom tacos are hearty and healthy with smoky, aromatic seasoning and a meaty texture. Serve on a warm tortilla with sauteed peppers and onions and drizzle on some delicious homemade jalapeno lime crema. An easy dinner the whole family can love! Ingredients: 1 lb mixed mushrooms 2 tbsp low sodium tamari or soy sauce 1-2 tsp fresh lime juice 2 tbsp chipotle seasoning, more or less to taste 1 green bell pepper, julienned 1 red bell pepper, julienned 1 tsp each of salt and pepper 1 sweet onion, chopped Small flour or corn tortillas Jalapeno Lime Crema: 1-2 jalapenos, deseeded 1 cup fresh cilantro leaves 1 tbsp onion, chopped 2 garlic cloves ⅔ cup sour cream 1 tbsp fresh lime juice 1 tsp honey ¼ tsp salt Garnish: Hamama microgreens Jalapeno Lime Crema Shredded cheese Hot sauce Instructions: In a large skillet over medium-high heat, add the mushrooms and tamari and cook for 7-10 minutes. Add in the lime juice and chipotle seasoning. Stir to combine and cook for another 5 minutes or until sauteed and slightly browned. When the mushrooms are ready, turn off the heat and cover. In another skillet, cook the bell peppers, onion, salt and pepper over medium-high heat until sauteed, about 7-10 minutes. Turn off the heat and cover. Prepare the Jalapeno Lime Crema: Add all of the crema ingredients to a food processor and pulse until smooth. Add to a jar and set aside in the fridge until ready. Assemble: Warm up some tortillas and add the mushrooms, peppers and onions, jalapeno lime crema, cheese, and fresh microgreens. Serve immediately & enjoy!
