It has the perfect balance of crunchy & creamy textures and savory & sweet flavors. Homegrown popcorn microgreens add that perfect touch of sweetness. Serve this side at your next BBQ! Ingredients: 1 lb frozen sweet corn 2 tbsp butter 2 jalapenos, deseeded & chopped ½ red onion, chopped 2 green onions, chopped 1 ½ cups parsley, chopped ½ cup popcorn microgreens, chopped Creamy Savory Sauce: 1 tbsp vegan mayo 4 tbsp fresh lime, juiced ½ tsp cumin ½ tsp paprika ¼ tsp chili powder ¼ tsp salt Instructions: Heat the butter in a medium skillet over medium-high heat. Add the sweet corn and cook for about 10 minutes, stirring occasionally. Let it cool. Mix the savory sauce ingredients together in a small bowl. Set aside when combined well. Add the chopped vegetables to a medium-sized bowl, including the corn. Pour the savory sauce on top then mix to combine. Serve as a side salad, atop any protein or as a dip with your favorite chips.
