Corn Salad with Creamy Savory Sauce

This corn salad checks off all the boxes: It’s flavorful, refreshing & easy to make. It has the perfect balance of crunchy & creamy textures and savory & sweet flavors. Homegrown popcorn microgreens add that perfect touch of sweetness. Serve this side at your next BBQ! 




Creamy Savory Sauce:

  • 1 tbsp vegan mayo
  • 4 tbsp fresh lime, juiced
  • ½ tsp cumin
  • ½ tsp paprika
  • ¼ tsp chili powder
  • ¼ tsp salt




  1. Heat the butter in a medium skillet over medium-high heat. Add the sweet corn and cook for about 10 minutes, stirring occasionally. Let it cool.
  2. Mix the savory sauce ingredients together in a small bowl. Set aside when combined well.
  3. Add the chopped vegetables to a medium-sized bowl, including the corn. Pour the savory sauce on top then mix to combine. Serve as a side salad, atop any protein or as a dip with your favorite chips. Enjoy!
