Crab Pasta Salad with Savory Celery Microgreens

Enjoy this perfect crab pasta salad on a nice summer night. It’s healthy, light, delicious and totally satisfying! The celery gives it a crisp texture, the peas provide a pop of sweetness and my all time favorite crab meat makes this combination a must-try. Don’t forget to toss in some savory celery microgreens and enjoy!

Ingredients:
 

  • 8 ounces penne pasta, or pasta shells
  • 8 ounces crab meat
  • ½ cup celery, chopped thinly
  • ¼ cup savory celery microgreens
  • ½ cup frozen peas, thawed
  • ¼ cup green onions, chopped thinly

 

Creamy Seafood Sauce:

  • ¾ cup Greek yogurt
  • 1 lemon, juiced
  • 1 tsp old bay seasoning
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 2 tbsp fresh dill, chopped finely
  • Salt and pepper to taste

Instructions:

  1. Cook the pasta according to the package instructions, drain and let cool.
  2. Prepare the sauce: Mix all of the ingredients together and set aside.
  3. Add all of your salad ingredients to a bowl and pour the sauce on top. Toss well to combine and add salt and pepper to taste. Garnish with more microgreens and enjoy!
