Creamy Avocado Pasta

If you’re looking for a simple yet totally satisfying plant-based dinner, this creamy avocado pasta is perfect! Simply cook up some of your favorite pasta, mix the sauce ingredients together in a blender, toss together & serve!



  • 12 oz angel hair pasta or pasta of choice


Avocado Sauce:

  • 2 large avocados
  • ¼ cup vegetable broth
  • ¼ cup olive oil
  • ½ cup fresh basil leaves
  • 2 tbsp lemon juice
  • 5 garlic cloves
  • ¼ cup cashew parmesan cheese
  • 1 tsp salt
  • ¼ tsp ground pepper






  1. Cook pasta according to package instructions.
  2. Add all of the remaining ingredients into a food processor and blend until smooth and creamy. (taste and adjust as needed)
  3. When the pasta is ready, serve in a bowl with the avocado sauce and garnish with fresh microgreens, extra cheese and salt and pepper to taste.
