Creamy Chard and Fennel Soup

If you are looking for a refreshing & healthy soup, this is it! With just a few simple ingredients, it takes no time to make and it’s absolutely delicious!

Ingredients

  • 1 Fennel Bulb & Fronds (medium size)
  • 1 Onion
  • 1 bunch of Chard
  • 1 Potato (medium size, chopped thin)
  • 2 cups Water
  • 1/4 cup Coconut Cream
  • Salt and Pepper (to taste)
  • Olive Oil
  • Braggs Amino Acids (or tamari) for garnish
  • Microgreens and Seeds for garnish (pumpkin seeds, sesame seeds…)

Instructions

  1. Add a tablespoon of olive oil to a hot pan and add the onion and fennel (plus fennel fronds). Cook until sauteed to your liking.
  2. Add the potato to the fennel and onion. Add the chard and 2 cups of water. Cook until all has sunk down and started simmering.
  3. Add coconut cream, salt, and pepper and blend until the soup is smooth and silky. (Add more water if necessary)
  4. Garnish with some braggs, seeds, microgreens and enjoy!
