Crockpot Lamb Stew

A good hearty stew, whether vegetarian or with meat, is arguably the coziest comfort food there is. This recipe has super tender lamb, a deeply flavorful broth and hearty veggies that are done just right. Warming and soothing, this lamb stew is perfect for a cold fall or winter day. 

Ingredients:
 

  • 2 lb lamb shoulder
  • 1 tsp salt and pepper
  • ¼ cup all purpose flour
  • 1 medium onion, chopped
  • 4 garlic cloves, chopped
  • 1 ½ lbs red potatoes, chopped thick
  • 4-5 medium carrots, chopped thick
  • 2-3 celery stalks, chopped
  • 1 ½ cups red wine
  • 2 cups beef or bone broth
  • 2 tbsp worcestershire sauce
  • 2 bay leaves
  • 1 tsp fresh rosemary

Instructions:

  1. In a large bowl, toss your lamb meat in the flour, salt and pepper.
  2. Add olive oil to a large skillet over medium-high heat and add your lamb meat. Let it brown on both sides for about 3-5 minutes.
  3. Once your lamb is done, transfer all of your ingredients to your crockpot and cook on low for 8 hours or overnight.
  4. When your lamb and veggies are nice and tender and you can smell the fragrant aromas throughout your kitchen, serve yourself a bowl and garnish with hamama microgreens for a delicious, nourishing and hearty meal!
