Feta Fried Egg Stack

Savory, salty, lemony & garlicky, these Feta Fried Eggs will be your new breakfast obsession. The crispy crumbled feta creates a delicious crispy golden crust for the egg. Nestle it all on a toasty tortilla topped with mashed avocado, herbs and lemon then top it all off with some Garlicky Chives microgreens & hot sauce. Best part of all is that it’s ready to eat in just 5 minutes! 



  • 1 large egg
  • 1 ½ - 2 tbsp crumbled feta cheese
  • 1 small tortilla or slice of bread, toasted 
  • ¼ avocado
  • Dried oregano or seasoning of your choice
  • Salt & pepper to taste  
  • Olive oil or butter to coat the pan 
  • Lemon juice


  • Garlicky chives microgreens
  • Pickled Onions
  • Chili Oil or hot sauce




  1. Lightly coat a small fry pan with olive oil or butter and crumble the feta cheese over the entire pan.
  2. Allow the feta cheese to sizzle over a medium-low heat for a couple of minutes so it can melt and get golden without burning. 
  3. Gently crack the egg in the center of the pan over the feta cheese.
  4. Season the egg with a sprinkle of dried oregano, red pepper flakes, black pepper and sea salt to taste (be mindful that the feta cheese is already salty, so you may not want additional salt). Cover the pan and cook the egg to your liking.
  5. Gently toast the tortilla in another skillet. Smash the avocado and add a squeeze of fresh lemon juice. Spread the avocado on top of the tortilla.
  6. When the egg is cooked and the cheese has created a golden brown crust, gently remove from the pan using a spatula and place on the tortilla.
  7. Garnish with pickled onions, a drizzle of chili oil / hot sauce and Garlicky Chives microgreens. Enjoy!
