Author: Carolyn Severin, Hamama Success Team Member Prep Time: 20 minutes Cook Time: 5 minutes Makes: 4-6 servings This fresh fig salad with toasted pine nuts, mixed lettuce, microgreens and a flavorful vanilla-balsamic vinaigrette is perfect for early autumn gatherings. It’s beautiful, healthy and all around delicious! Ingredients: 6-8 figs, stems removed, quartered ½ cup pine nuts, toasted 5 oz mixed lettuce, including arugula ¼ cup sweet onion, thinly sliced 1 cup microgreens 10 basil leaves, lightly chopped Vanilla-Balsamic Vinaigrette: ¼ tsp vanilla extract 2 ½ tbsp balsamic vinegar 1-2 tsp maple syrup 3 tbsp olive oil ½ tsp salt ½ tsp pepper Instructions: In a small skillet over medium heat, add the pine nuts and toast for 5-6 minutes, stirring occasionally. Let cool when ready. Prepare the vinaigrette: Add all dressing ingredients together and mix to combine. Set aside. Combine your pine nuts, figs, mixed lettuce, onion, microgreens and basil into a large bowl. Drizzle the vinaigrette over the top, mix to combine and enjoy!
