Over the past couple of years, I’ve been OBSESSED with appetizers and love to eat them throughout the day. These fresh bite-sized snacks are sure to put a smile on everyone’s face! \n\n \n \n \n \n \n \n \n \n \n \n \n \n \nIngredients for Tomato Mix:\n5-6 ripe tomatoes, diced\n2 cloves garlic or 2 tbsp garlic\n¼ red onion, chopped\n2 tbsp balsamic vinegar\n6-8 basil leaves, chopped\nOther Ingredients:\n¼ tray of microgreens to garnish\n½ cup fresh mozzarella \n1 baguette \nSalt\nPepper\nOlive oil\nGarlic powder\n\nInstructions: \n\nPreheat oven to 400 degrees. Slice baguette into thin slices, spray with olive oil and sprinkle with garlic powder. Toast in oven until golden brown. \nCombine tomatoes, garlic, red onion, vinegar, basil. Salt and pepper to taste.\nMake little balls of mozzarella cheese.\nPlace bread on serving dish, top with bruschetta mixture, a small ball of mozzarella, and a few microgreens.\nServe immediately and enjoy!\n\n \n Happiness happens for me when I've created a delicious treat that look beautiful!
