Recipe: Garden Fresh Bruschetta Author: Maura Rooney, Team Happiness Prep Time: 10 minutes Cook Time: 12 minutes Makes: 20-25 pieces Anyone else overwhelmed with an abundance of fresh, garden-grown tomatoes that you don’t know what to do with? Over the past couple of years, I’ve been OBSESSED with appetizers and love to eat them throughout the day. These fresh bite-sized snacks are sure to put a smile on everyone’s face! Ingredients for Tomato Mix: 5-6 ripe tomatoes, diced 2 cloves garlic or 2 tbsp garlic ¼ red onion, chopped 2 tbsp balsamic vinegar 6-8 basil leaves, chopped Other Ingredients: ¼ tray of microgreens to garnish ½ cup fresh mozzarella 1 baguette Salt Pepper Olive oil Garlic powder Instructions: Preheat oven to 400 degrees. Slice baguette into thin slices, spray with olive oil and sprinkle with garlic powder. Toast in oven until golden brown. Combine tomatoes, garlic, red onion, vinegar, basil. Salt and pepper to taste. Make little balls of mozzarella cheese. Place bread on serving dish, top with bruschetta mixture, a small ball of mozzarella, and a few microgreens. Serve immediately and enjoy!
