Recipe: Green Bean Casserole Bites Author: Carolyn Severin, Hamama Happiness Team Member Prep Time: 15 Minutes Cook Time: 30 Minutes Makes: 12-14 Enjoy the traditional Thanksgiving Green Bean Casserole in an adorable bite sized appetizer! I chose to go with non dairy, but you can go the regular traditional route as well! With the crispy fried onions and crispy phyllo, your mouth will be watering for more!! Ingredients: 1 Box Phyllo Pastry Sheets Drizzle of Olive Oil 2 Cups Green Beans ½ Onion Chopped 3 Garlic Cloves 8 oz Mushrooms ½ Tsp Salt ½ Tsp Pepper 2 Tbsp Flour ½ Cup Vegetable Broth ½ Cup Coconut Milk 2 Cups Crispy Fried Onions Microgreens for Garnish Instructions: Heat the oven to 375F. Unroll the phyllo sheets on a lightly floured surface and cut rounds from each sheet using a cutter. (any size you choose) Gently press the round cutter onto the phyllo sheets and place in a muffin pan. Once the oven is ready place the phyllo cups in for 10 minutes, until crispy and browned a little and let cool once ready. Before sauteeing your vegetables, bring a pot of water to a boil. Add in the green beans until desired tenderness, around 7-10 minutes. Drain and set aside when ready. Get out a medium sized pan, turn your stove on to medium- high heat and drizzle a little olive oil. Add in your chopped mushrooms, onion and garlic and saute. Once the vegetables are sauteed, add in the flour and stir consistantly until nicely mixed in. Then add in the coconut milk and vegetable broth and stir until thick and creamy. Add in the green beans, french onions, salt and pepper and mix well. Lastly, get your phyllo cups and place your green bean casserole in each cup. Top with more fried onions and place in the oven for about 6-10 minutes. (oven still on 375F) When the green bean casserole bites are ready, serve on a plate and top with your favorite microgreens!!!
