Grilled BBQ Veggie Skewers

Meat or no meat, skewers are always a crowd pleaser! These are pretty simple, but taste so fantastic grilled. Add a flavorful sauce and some fresh microgreens for a great summer appetizer or side dish!


  • 1-2 zucchini, chopped into ~ ½ inch thick medallions
  • 1-2 yellow squash, chopped into ~ ½ inch thick medallions
  • 1 bell pepper, chopped thick
  • 1 vidalia onion, chopped thick
  • 8-12 baby bella mushrooms
  • BBQ sauce, any variety you like or homemade




  1. Preheat your grill at medium heat around 350 -450F.
  2. Soak your wooden skewers if using them for 10-20 minutes.
  3. Cut the vegetables into large chunks and thread onto skewers gently.
  4. Cover the vegetable skewers in the BBQ sauce and grill with lid closed until slightly charred and tender, about 3-5 minutes.
  5. When your skewers are ready, serve as a side or appetizer to enjoy on a hot summer day! Don’t forget to garnish with fresh Hamama microgreens!
