Wrap the pork in foil to hold in moisture and cook at 215-225 degrees F for about 4-6 hours or until done, depending on the size of your pork butt or shoulder. Note that this cooking time is for a 4-pound Boston butt pork shoulder. A general rule on barbecued pork is to cook it at about 215°F to 225°F for 90 minutes per pound. "Now this is my idea of a pulled pork sandwich. Pork butt rubbed generously with Meat Church's The Gospel, smoked & served on a toasted bun with coleslaw, homemade bread-and-butter pickles, Sweet Baby Ray's BBQ sauce and Hamama hot wasabi mustard microgreens.” -David Ingredients: 4-5 pounds, pork butt, cut into thick slabs Meat Church’s The Gospel, enough to cover the pork on both sides 5 to 6 cups wood chips, such as hickory, oak, apple, or other fruit wood Garnish: Toasted buns Coleslaw Homemade bread-and-buttered pickles Sweet Baby Ray’s BBQ sauce, or your favorite BBQ sauce! Hamama wasabi mustard microgreens Instructions: For the Pork Butt: Rub your pork butt generously with Meat Church’s, The Gospel or your favorite BBQ rub. It’s best to then let this sit a few hours or overnight in the refrigerator to allow the pork to absorb the flavors of the rub. Smoke your pork butt at 180°-225° for about 4 hours. If the roast isn't done after 6 hours, finish it in the oven, wrapped tightly in foil to hold in the moisture. When your pork butt is nice and tender, shred it with a fork. Assemble the pulled pork onto your toasted buns and top with your favorite add-ons, like pickles, coleslaw, bbq sauce, and your favorite Hamama greens. The wasabi-mustard variety pairs so well with this recipe! Dig in & enjoy! Make this recipe today!
