Lemon & Microgreen Basil Vinaigrette

This lemony-basil vinaigrette comes together so easily and quickly and its uses are endless! Its bright and herbaceous flavors compliment just about any salad you could think of, but I especially love to drizzle it on quinoa or pasta salads as the flavors are subtly reminiscent of freshly prepared pesto. You can also use it as a sauce for veggies, rice or proteins, cuz the saucier, the better :) Bonus - It’s super healthy for you!


Benefits of basil microgreens: 

  • Contain protein
  • Full of vitamins E, K, A, B6 & C
  • High in calcium, iron, zinc, magnesium, copper, phosphorous, and even potassium
  • Anti-Inflammatory & anti-bacterial properties


  • ¼ cup good-quality olive oil
  • 2 tbsp fresh lemon juice
  • ½ inch piece of lemon peel (no pith)
  • 1 tsp apple cider vinegar
  • 1 garlic clove
  • ½ tsp dijon mustard
  • ½ tsp pure maple syrup or honey
  • Pinch of sea salt & freshly cracked pepper
  • 1 cup fresh basil or bold basil microgreens (or a mixture of the 2)


  1. Blend the dressing ingredients in a blender until smooth and creamy. Add a dash of water if needed to thin it out to your liking.
  2. Drizzle over salads, quinoa salads, pasta salads, roasted veggies or proteins. Enjoy! !
