This beauty won’t disappoint! “With all the fresh summer produce in season during the summer I love making simple but flavorful salads! I’ve also enjoyed adding micro greens to all the things especially salads where they add some spice and added texture. This refreshing summer salad is great on its own but also makes a wonderful side to grilled meat or seafood. “ -Julia Ingredients: 4 cups of little gem lettuce or baby romaine 1/2 cup microgreens 1 small zucchini shaved length wise 3-4 small radishes shaved 1-2 Tablespoons tarragon (dill would also work) roughly torn 1/2 cup walnuts toasted and finely chopped 1 small shallot minced 2 tablespoons lemon juice + zest from 1 lemon 2 tablespoons of champagne vinegar 1/2 cup extra virgin olive oil + 1 tablespoon for walnuts Flaky salt and freshly ground pepper Instructions: In a small frying on medium heat, toast walnuts for 5-6 minutes. Remove from the pan and chop finely. Add the walnuts, 1 tablespoon of oil and a pinch of salt in a small dish and set aside. In another bowl whisk together the lemon juice, zest, vinegar, shallots and olive oil and set aside. On a large serving platter or bowl place greens and top with micro greens, shaved zucchini and radish. Drizzle the dressing on top and toss with walnuts.
