Mango & Avocado Summer Salad

This mango & avocado summer salad is fresh, crisp and absolutely delicious on a warm summer day. When you need to cool off and want a quick bite that doesn’t require the oven or stove, this should be your go to dish!

 

Ingredients:

  • 1 mango, diced
  • 1 avocado, diced
  • 1 yellow bell pepper, diced
  • ½ english cucumber, diced
  • ¼ cup fresh mint, chopped finely
  • 1 cup Hamama microgreens

 

Peanut Sauce:

  • 1/2 cup smooth peanut butter
  • 1/4 cup water plus more as needed to thin
  • 1 tbsp honey
  •  1 tbsp fresh lime juice
  • 1 tsp tamari or soy sauce
  • 2 tsp fresh ginger, grated
  • 1 garlic clove, minced

 

 

Instructions:

  1. Prepare the peanut sauce: Add all of the ingredients together and blend until smooth. 
  2. Add all of your fruits and veggies to a medium bowl. Top with fresh microgreens and dressing, lightly toss and enjoy!
