Mushroom Teriyaki Stir Fry

Love the feeling of bringing home your favorite takeout? This healthy and quick beef stir-fry will give you the same feeling without any guilt. It's loaded with broccoli, mushrooms and peppers and is tossed in a sweet and savory teriyaki sauce. Serve over rice or quinoa and make your belly happy! 

Ingredients:

  • ¼-½ lb mushrooms
  • 1 lb ground beef or beef strips
  • ½ cup prepared Teriyaki sauce
  • ½ cup beef broth
  • 2 tsp garlic, minced
  • 1 cup onion, chopped
  • 1 cup peppers, chopped
  • Salt & pepper to taste
  • Rice or quinoa, for serving 

Instructions: 

  1. Cook beef in a medium-heat pan and drain the fat. Add chopped onions, garlic and peppers into the pan. Cook until onions are translucent.
  2. Tear mushrooms into strips and add to the pan with teriyaki sauce and broth. Stir thoroughly to coat mushrooms and beef. 
  3. Turn the heat down to low and let simmer for 5-10 minutes until mushrooms are cooked through.
  4. Best served over quinoa or rice. Enjoy!
