Parmesan & Herb Crusted Purple Sweet Potato Fries

Makes: 2-4 servings

These sweet potato fries are crispy on the outside, pillowy on the inside and fully loaded with herbs and parmesan. Enjoy as a snack or as a side to accompany any dish!

 

Ingredients:

  • 2 large purple sweet potatoes, peeled, cut into ½ inch wedges
  • 2 tbsp extra virgin olive oil
  • ¼ cup parmesan cheese, grated finely
  • 3 garlic cloves, minced
  • 2 tbsp fresh parsley leaves, minced
  • ½ tsp fresh thyme leaves, minced
  • 1 tsp onion powder
  • ¼ tsp salt

Instructions:

  1. Preheat the oven to 425°F.
  2. Line a baking sheet with parchment paper.
  3. In a large bowl, toss the sweet potato wedges with olive oil and coat evenly.
  4. Spread the potatoes out in a single layer on the baking sheet and bake for 20-30 minutes, flipping the potatoes halfway through. Cook until fork tender.
  5. In a small bowl, toss together the parmesan cheese, parsley, thyme, onion powder and salt. 
  6. Remove the sweet potatoes from the oven and coat them evenly with the seasoning mixture.
  7. Place the potato wedges back into the oven on low broil. Watch closely and remove once the cheese has melted and browned just slightly.
  8. Serve hot and enjoy!
