These beautiful Radicchio Salad Bowls make a healthy & delicious appetizer or side salad!! All of these ingredients create a great flavor, texture and crunch combo :D

*TIPS:

  1. To make radicchio less bitter when eating it raw, the trick is to soak it in ice water! I simply place it in the basket of my salad spinner and soak it in ice water while I’m preparing the other ingredients. After about 10 minutes, I drain it and spin in dry in the salad spinner to prepare it for tossing with my other ingredients. You can also add a bit more sea salt to balance out the flavors!
  2. Getting nice leaf bowls from radicchio is a bit tough: Cut the head of radicchio in half and peel away layers very slowly. Sometimes layers are overlapping and stuck so don’t worry if it’s not exactly perfect, just get a bowl without rips in the bottom so you can eat your side salad like a taco and not have the dressing drip through!

Ingredients:

  • 4 leaves from a head of radicchio
  • ½ Earthy Clover Seed Quilt
  • Handful of sunflower seeds or pumpkin seeds
  • 3 Tbsp good Olive oil
  • 1/2 Tbsp Fresh squeezed lemon juice (sub w/ more vinegar if preferred)
  • 1/2 Tbsp Apple cider vinegar
  • Salt & cracked black pepper to taste
  • Optional Toppers - Shaved Parmesan cheese, feta cheese, dried cranberries or cherries

Instructions (Assembly):

  1. Soak and drain/dry the radicchio (optional)
  2. Cut the head of radicchio in half and peel away layers very slowly. Sometimes layers are overlapping and stuck so don’t worry if it’s not exactly perfect, just get a bowl without rips in the bottom so you can eat your side salad like a taco and not have the dressing drip!
  3. Prepare the dressing - Olive oil, Apple cider vinegar, salt, pepper and optional lemon juice (a small dollop of Dijon mustard would be yummy too!).
  4. Toss the clover microgreens (or whichever you prefer) with the dressing, then center in the radicchio cups.
  5. Top with seeds, Parmesan cheese, and dried cranberries!
