Rainbow Wraps with Peanut Sauce

These simple veggie wraps are packed with fresh, colorful & healthy vegetables and are served alongside a creamy homemade peanut sauce. Enjoy these rainbow wraps on a  hot summer day; They are the perfect lunch, appetizer or snack!

 

Ingredients:

  • 2 -3 flour tortillas
  • 1-2 small carrots, julienned 
  • 1 red bell pepper, julienned
  • 1 tomato, julienned
  • 1 cucumber, julienned
  • 1 avocado, julienned
  • ½ cup purple cabbage, chopped finely
  • Handful of your favorite microgreens
  • Hummus of your choice

 

Peanut Sauce:

  • 2 tbsp coconut cream
  • ¼ cup creamy peanut butter
  • 1 tsp rice vinegar
  • 1 tsp Thai Red Curry Paste
  • 2 tsp honey
  • 2 tsp fish sauce
  • 1 tsp sesame oil
  • 2 tsp Sriracha
  • 2-3 tbsp water, to thin out the sauce if needed

 

 

Instructions:

  1. Prepare Peanut Sauce: Combine sauce ingredients together until smooth. Taste and adjust as needed.
  2. Assemble the Rainbow Wraps: Spread some hummus in the middle of each tortilla. Add a small amount of each veggie, including the microgreens, then carefully wrap each tortilla. With a large knife, cut the rainbow wraps in half and set aside. 
  3. Arrange wraps on a platter & serve with the freshly prepared peanut sauce. Enjoy!
