Refreshing Summer Cucumber Soup

Recipe: Refreshing Summer Cucumber Soup

It sure has been hot lately on these summer days, but one thing I crave even when hot is a good soup! Most often I prefer it warm, but when it’s too hot outside, I opt for a cold soup. This soup is filled with healthy refreshing flavors. With the cucumber and some fresh herbs and microgreens, it is sure to cool you off!


  • 2 large Cucumbers (peeled and chopped)
  • 1 cup Plain Yogurt (I like to use non dairy)
  • 1 Tsp Dijon Mustard
  • 2 Tbsp Lemon Juice
  • 2 Tbsp Clover, Kale or Broccoli Microgreens
  • 1 Green Onion (chopped, add more if needed)
  • 2 Tbsp fresh Parsley (chopped, add more if needed)
  • 2 Tbsp Cilantro (chopped, add more if needed)
  • A pinch of Salt
  • Garnish: Microgreens, Red Onion, Green Onion, Parsley, Cilantro, Salt, Pepper


  1. Puree everything in a blender. Slowly add water to get the consistency you desire.

2. Once ready you can strain it if you want or leave as is. Place in a container and let cool for an hour or overnight to get the perfect cool, refreshing taste. Add your fresh garnish when you are ready to eat it and enjoy!
