Ricotta & Spinach Girasoli with Creamy Spinach Sauce

If you’re looking for a quick homemade meal, this recipe takes less than 30 minutes and is super delicious! The creamy spinach sauce has a punch of garlic & toasted pistachio flavor and it whips together in a breeze. Garnish with parmesan cheese and some of your favorite fresh microgreens for a great quick meal! 





Creamy Spinach Sauce:

  • 3 cups spinach
  • 4 garlic cloves
  • 1 small onion, chopped
  • ⅓ cup toasted pistachios
  • 2 tbsp grated parmesan cheese
  • ½ tsp salt and pepper
  • ½ cup olive oil, or more for desired consistency
  • ¼ cup heavy cream






  1. Cook the Ricotta & Spinach Girasoli according to package instructions (around 3-4 minutes). Set aside.
  2. Add all of the Creamy Spinach Sauce ingredients [except for the olive oil & heavy cream] in a food processor. Blend, drizzling in the olive oil until you reach your desired consistency. 
  3. Place a medium-sized skillet on medium-high. Add the spinach sauce along with the heavy cream, stir and let simmer for a few minutes until incorporated. 
  4. Add the Girasoli and stir well until each one is coated in the sauce.
  5. Serve in a bowl or plate and garnish with parmesan cheese, fresh microgreens and salt and pepper to taste.
