Roasted Brussels Sprouts with Bacon & Pomegranate

This is such a simple yet beautiful and delicious holiday side dish to share with loved ones! These brussels sprouts are roasted in the oven with smoky and salty bacon, then are tossed in a sweet and tangy vinaigrette. This is sure to become a favorite Holiday side dish!

Ingredients: 

  • 1 pound brussels sprouts, halved
  • 3 tablespoons extra virgin olive oil
  • kosher salt and black pepper
  • 4 thick-cut bacon slices, diced
  • 1/4 cup honey
  • 1 pinch crushed red pepper flakes
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons salted butter
  • 1/2 teaspoon fresh orange zest
  • Sprinkling of shaved Parmesan cheese (Can use any cheese you like!)
  • 1 cup pomegranate arils
  • Hamama Microgreens

Instructions:

  1. Preheat the oven to 425 degrees F & Position the oven rack in the lower 1/3 of the oven.
  2. On a rimmed baking sheet, mix together the brussels sprouts, olive oil, and a pinch of salt and pepper. Arrange the brussels sprouts cut side down on the baking sheet and add the bacon around the sprouts. Roast the brussels sprouts on the lower oven rack until browned and the bacon crisp, 20 to 25 minutes.
  3. In a small saucepan, bring the honey and crushed red pepper flakes to a boil over medium heat. Boil 1 minute. Remove from the heat and stir in the balsamic vinegar, butter, orange zest, and a pinch of salt and pepper.
  4. Remove the brussels sprouts from the oven and drizzle them with the warm glaze. Transfer the sprouts to a serving plate and garnish with Hamama greens, cheese and pomegranate arils.
