Roasted Carrots with Candied Pecans & Goat Cheese

These roasted carrots with candied pecans and goat cheese are sure to impress your guests! A simple side dish filled with delicious flavors. The carrots almost become candied themselves as they roast with brown sugar and cinnamon. The creamy, tangy goat cheese and crunchy sweet pecans pair perfectly together, making this a unique and delicious dish to share.

 

Ingredients:

  • 2 lbs carrots, peeled
  • ½ cup brown sugar
  • 1 tbsp olive oil
  • 4 tbsp butter, cut into pats
  • 1 tsp salt
  • ½ tsp pepper
  • ½ tsp cinnamon
  • 4 oz goat cheese, crumbled

 

Garnish:

  • Amaranth microgreens
  • Fresh thyme leaves
  • Candied pecans
  • Salt to taste

 

 

Instructions:

  1. Preheat the oven to 350°.
  2. Place the carrots in a single layer on a baking sheet. Coat the carrots with the brown sugar, cinnamon, salt and pepper. Once coated, evenly distribute the pats of butter on the carrots.
  3. Place in the oven and bake for 50-60 minutes or until the carrots are fork tender. Turn the carrots 3 or 4 times while roasting.
  4. Once the carrots are tender, place them in a serving dish. Add the candied pecans and goat cheese. Garnish with amaranth microgreens and fresh thyme leaves. Serve and enjoy!
