The sesame garlic sauce gives this recipe a rich depth of flavor and the crispy tempeh gives it a craveable crunchy texture. Each bite is oh-so-good and the best part is that you can make this meal in under 30 minutes! Ingredients: ¾ lb soba noodles 4 cups broccoli florets 8 oz tempeh, sliced ½ inch thick 2 tbsp coconut oil Sesame Garlic Sauce: ¼ cup tamari or soy sauce 1 ½ tsp toasted sesame oil 2 ½ tbsp pure maple syrup 2 ½ tbsp lime juice 1 garlic clove, minced 2 tbsp sesame seeds Garnish: Hamama microgreens 2 green onions, chopped Fresh basil leaves Salt and pepper to taste Instructions: For the Sesame Garlic Sauce: In a small bowl whisk together all ingredients and set aside. Bring a large pot of water to a boil and cook your noodles according to package instructions. Add the broccoli florets to the same pot when there are 5 minutes remaining for the noodles to finish cooking. When ready, strain the noodles & broccoli and set aside. Next, heat the coconut oil in a medium skillet over medium-high heat and place your tempeh slices in the pan. Cook on each side until browned. Top off with a fresh squeeze of lime juice to add a little extra flavor. Combine your noodles, broccoli, tempeh, and sesame garlic sauce on a large plate or bowl.
