They take almost no time to make! Make these for a quick lunch or a tasty meal to share with your loved ones.

  • 1 lb raw shrimp, peeled and deveined
  • 1 tbsp olive oil or butter
  • 2 ½ tsp Thai seasoning
  • 1 head of romaine lettuce
  • 1 cup of carrots, julienned
  • 1 cup purple cabbage, chopped finely
  • 1 red bell pepper, julienned
  • 3 tbsp scallions, chopped

Peanut Sauce:

  • ¼ cup creamy peanut butter
  • 1 tbsp white miso paste
  • Juice of 1 lime
  • 1 tsp fresh ginger, minced
  • 1 tsp garlic clove, minced
  • 1 tsp maple syrup
  • 1 tsp Sriracha
  • 3-5 tbsp hot water, to create desired consistency

  1. Peel and devein the shrimp and place in a bowl. Add the thai seasoning and mix well until each shrimp is well-coated. Add olive oil to a medium-sized skillet over medium heat and add the shrimp. Cook for about 4-5 minutes on each side until pink and slightly crispy. Remove the shrimp from the skillet and set aside to cool.
  2. Make the peanut sauce: Add all of the sauce ingredients together and whisk to combine.
  3. Assemble the wraps: Place one or two whole pieces of romaine lettuce on a plate. Layer on each vegetable and top off with shrimp, romaine microgreens, black sesame seeds and peanut sauce.
