Slow Cooker Tomato Soup

It’s soup season and slow cookers are a great way to go if you want something delicious that requires very little active cooking time. Your house will be filled with delicious and cozy aromas as the soup slowly cooks throughout the day or night. Make a grilled cheese to go along with it, or top it off with some crackers for some extra crunch. Don’t forget your tasty and nutritious microgreens on top!

Ingredients:

  • 28 oz can crushed tomatoes
  • 4 cups bone broth (sub any broth you like)
  • 2 tsp dried oregano
  • 2 tsp dried basil
  • 1 cup heavy cream
  • 3 tbsp butter
  • 1 tsp salt and pepper

Instructions:

  1. Add your tomatoes, broth, oregano and basil to a crockpot or large pot with a lid. Stir to combine and let cook for at least 8 hours on low (can go a little longer if you need).
  2. When 8 hours have passed, add in your cream, butter, salt and pepper and stir well to combine. Add the lid back on and let cook for another hour or two.
  3. When your tomato soup is ready, ladle into a bowl and add in extra salt and pepper to taste, fresh microgreens and crackers / toasty bread / grilled cheese for extra crunch and deliciousness!
