Smoked Salmon Cucumber Sushi Rolls with Wasabi Mustard Microgreens

I love a good sushi roll, and this easy-to-make recipe is out of this world! The wasabi mustard microgreens and wasabi cream sauce to go with it makes this perfect, spicy and refreshing. You can make this as a quick lunch or even a snack during your work week or on a hot summer day!

Ingredients:

  • ½ large english cucumber, sliced thinly
  • Dollop of wasabi cream sauce
  • 1 pack smoked salmon
  • ½ avocado, sliced thin;y
  • ¼ cup wasabi mustard microgreens
  • Pinch of sesame seeds

 

Wasabi Cream Sauce:

  • 1 -2 tbsp wasabi paste
  • ½ cup vegan mayo

 

Garnish:

Instructions:

  1. Slice your cucumber into thin strips with a peeler or mandolin and stack neatly next to one another, overlapping each slice a little bit.
  2. Make your wasabi sauce: Add ingredients together and mix to combine.
  3. Assembly: Add a thin layer of the wasabi sauce to the cucumber.
  4. Add the avocado slices, smoked salmon and wasabi microgreens. Sprinkle a little sesame seeds on top for extra crunch and flavor.
  5. Gently roll your sushi into a log.
  6. Gently slice into pieces and arrange on a plate.
  7. Garnish with extra sesame seeds, wasabi mustard microgreens and wasabi cream sauce for a delicious & refreshing roll with a kick!
