Recipe: Spanish Gazpacho Author: Carolyn Severin, Hamama Happiness Team Member Prep Time: 25 Minutes Cook Time: 20 Minutes Makes: 6-8 Servings This authentic Spanish Gazpacho is so refreshing and quick to make! It takes no time to add all the ingredients into your blender and serve! You can buy croutons or make your own with a baguette or any bread you choose. Enjoy this healthy meal for dinner or on the go! Ingredients: 12 Roma Tomatoes 3 Cucumbers 3 Red Bell Peppers 1 Red Onion 2 Garlic Cloves 2 Tbsp Sherry Vinegar 3 Tbsp Olive Oil 1 Tbsp Cumin 1 Tsp Salt 1 Tsp Pepper 1 Baguette for Croutons Microgreens for Garnish Instructions: Preheat oven to 400F. Get your baguette out and cut into small, square pieces and place on pan. Drizzle with olive oil and sprinkle a little salt and pepper and toss around to get all pieces coated. Once your oven is ready place the croutons in for 15-20 minutes depending on how crispy you want them. While the oven is heating up you can chop up your veggies and combine all ingredients in your blender. Puree until smooth or to your desired consistency. Once your croutons are ready, get out a bowl and add the Gazpacho and a few croutons, drizzle a little olive oil, salt if needed and a handful of microgreens and enjoy!
