Spicy Urad Moong Dal

Our Hamama Grower, @bewithlifek, loves this simple yet delicious Indian Dal recipe! This dish is fragrant, warm and has a hint of freshness with a healthy garnish of your favorite Hamama microgreens! This is the perfect comfort food to add to your weekday or weekend dinner rotation!

  • 1 cup prepared Urad dal & ¼ cup prepared Moong dal (cooking instructions below)
  • Tempering Spices:
    • 1 tbsp ghee,
    • ½ tsp mustard seeds
    • 1 tsp cumin seeds
    • 1 tsp dry Methi seeds
    • Pinch Asafoetida
    • 1 dry red chili
    • 1 sliced jalapeño or green chilis
    • 4 garlic cloves, sliced
    • 1 tbsp thinly sliced ginger
    • 1 stem curry leaves
    • 1 large sliced onion
    • 3 sliced tomatoes
    • 1 ½ tsp coriander-cumin powder
    • 1 tsp garam masala
    • sea salt to taste!
  • Fresh juice of ½ lemon
  • 4-5 tbsp chopped fresh cilantro

For Serving:


  1. Wash & soak dal overnight or for at least 8 hours.
  2. Pressure cook dal 4 to 5 whistles* with turmeric, 3-4 cloves, 4-6 peppercorns, 1.5-2 cup water & sea salt. Whisk & grind some dal into semi fine paste, keep some texture. 

*For every whistle, cook for about three minutes in the pressure cooker.

  1. While you have dal pressure cooking, heat ghee in a pan, add spices, onion, ginger and garlic and sauté for 2 mins.
  2. Add the rest of the tempering ingredients, sauté 5 minutes on low-medium heat.
  3. Add dal to this tempering, adjust water consistency & continue cooking for 10-12 minutes.
  4. Turn off heat, and serve with lemon juice, cilantro and microgreens of your choice!

Tip: You can vary the ratio of dal although this is my favorite & super delicious! Enjoy with roti, paratha, or rice! Or just like me with microgreens! 😃
