Swiss Chard Pancakes

Makes: 8-10 pancakes 

Every bite of these deliciously soft and creamy swiss chard pancakes will leave you wanting more. Enjoy these flavor bombs with a dollop of tangy sour cream & serve alongside your favorite meals. They also make a great appetizer to pass around! 

 

Ingredients:

  • 3 large eggs
  • 1 small onion, minced
  • 2-4 garlic cloves, minced
  • ½ cup whole milk
  • ½ cup all- purpose flour
  • ½ tsp salt
  • ¼ tsp ground pepper
  • ½ tsp baking soda
  • 1 bunch swiss chard, stems removed & chopped finely
  • 10 - 12 cilantro or parsley sprigs, stems removed & chopped finley
  • Coconut oil for frying

Instructions:

  1. In a medium-sized bowl, whisk together the minced onion, garlic, eggs and milk until combined.
  2. In another bowl, mix together the dry ingredients: the flour, baking soda, salt and pepper.
  3. Combine the wet and dry ingredients, including the swiss chard and parsley or cilantro, and mix to combine.
  4. In a large skillet, heat up ¼ cup oil over medium-high heat. When the oil is hot, add in about a ½ cup of the pancake batter and cook on each side for about 3-5 minutes or until golden brown. Set each one aside on a plate to cool until you use up all of the batter.
  5. Serve with sour cream, fresh microgreens and salt to taste.
