Tangy BBQ Chicken Chopped Salad

Makes: 2-4 Servings

Making a chopped salad is just a matter of chopping up all the ingredients evenly! This way, every bite of this salad is literally bursting with flavor (and each bite is more manageable too)! In this salad, you’ll have lots of crunchy vegetables, rich and creamy avocado, smokey and peppery bacon, tons of fresh microgreens, green onions and cilantro, all topped with a cool and tangy dressing. Perfectly refreshing for a summer night!
 

Ingredients:

  • About 3 cups Romaine lettuce, chopped (I also like to mix in some fresh arugula or chopped red cabbage!)
  • 1 cup black beans, rinsed, drained and seasoned (I use salt, pepper, smoked paprika, and garlic powder) 
  • 2 ears of grilled/charred corn on the cob (or about 1.5 cups of canned or frozen corn. I’d use a fire-roasted variety). 
  • Vine ripened tomatoes, chopped and drained slightly on paper towel
  • 1 avocado, chopped
  • 1 cup of carrot shreds or chopped carrot 
  • 4 strips of peppered bacon, cooked and chopped 
  • 2 chicken breasts, grilled/baked/pan fried, seasoned & chopped (to save time, I often use part of a fresh rotisserie chicken. I just chop and season as much as I’d like! For this salad, I season the chicken with smoked paprika, garlic, salt, pepper, and just bit of BBq sauce)
  • Cotija or feta cheese (can sub shredded cheddar or pepper jack cheese) 
  • BBQ Ranch Dressing (store-bought or click for recipe)
  • Additional toppings: Tons of fresh cilantro, green onions, your favorite Hamama  microgreens & sliced fresh or pickled jalapenos! You can also add tortilla strips for extra crunch :)

Instructions:

  1. Get out all of your ingredients, chop them up and place in a large bowl.
  2. Mix the ingredients well and serve yourself.
  3. Drizzle on the bbq ranch dressing and add some additional toppings for the ultimate salad!
