Thai Beef Noodles

Skip the takeout and make your own craveable meal at home in just 30 minutes! These Thai Beef Noodles are full of umami flavor with sesame oil, red curry paste, garlic, lemongrass & chili oil. You can easily mix up the veggies to your preference. Top with fresh microgreens & herbs and voila - a super tasty meal that you can make any day of the week.

 

Ingredients:

  • ¼ cup sesame or olive oil (or a mix of both) 
  • 2 tbsp butter
  • ⅓ cup green onions, thinly sliced
  • 3 tbsp Thai red curry paste
  • 3-4 cloves garlic, chopped
  • 1 shallot, chopped
  • 1 lb lean ground beef
  • 2 tsp rice wine vinegar
  • 1-2 tsp lemongrass paste (optional) 
  • 1 egg
  • 1-2 bell peppers, thinly sliced
  • 1 zucchini, thinly sliced 
  • 1 cup chopped broccoli florets
  • 8 oz shiitake mushrooms, or your favorite variety, sliced 
  • Chili flakes to taste (optional for heat)
  • ½ cup fresh Thai or regular basil, chopped 
  • ¼ cup fresh cilantro, chopped
  • 4 squares ramen noodles or 6 oz of rice noodles
  • ⅓ cup tamari or soy sauce
  • 1 tsp honey or brown sugar 

 

For serving:

  • Radish microgreens, or your favorite variety 
  • Additional green onion slices and herbs 
  • Sriracha 
  • Peanuts or cashews, roughly chopped 

 

 

Instructions:

  1. In a skillet, saute the green onions in the oil over medium heat until fragrant, 3-5 minutes. Lower the heat, stir in the butter, red curry paste, lemongrass paste, garlic, shallots, and chili flakes. Cook for about 2 minutes.
  2. Add the beef to the pan and brown all over for about 5 minutes, breaking up the meat as it cooks. Add in a few splashes of tamari, the rice wine vinegar and 1 teaspoon of honey. Let the beef caramelize for 2 minutes longer. Mix in the egg and vegetables & toss to combine. Cook until the veggies are still a bit firm, but tender.
  3. Cook the noodles according to package directions, then drain and toss with the beef mix and 1/3 cup of tamari. Let everything cook together for 2-3 minutes, then remove from the heat.
  4. Serve the noodles in bowls and garnish with extra green onions, herbs and microgreens. Sprinkle on some peanuts for extra flavor and crunch!
