Vegan Sprouted Lentil Burgers

Recipe: Vegan Sprouted Lentil Burgers

Makes:  4 -10 Servings depending on size

If you’re looking for a fun recipe to make and have the time on your hands, try out these amazing vegan sprouted lentil burgers! Add your favorite burger toppings and enjoy!

Ingredients:

  • 1 ½ Cup Sprouted Lentils (any kind, I used French Lentils)
  • ½ Cup Brown Rice (cooked)
  • ½ Cup Quinoa (cooked)
  • ½ Cup Walnuts
  • ½ Cup Sunflower Seeds
  • 1 Tbsp Miso Paste
  • 1 Tbsp Olive Oil
  • 2 Tbsp Dijon Mustard
  • 2 Tsp Garlic Powder or a Garlic Clove (or both if you want to pack on some extra garlic flavor)
  • 1 Small Onion (chopped)
  • 1 Tsp Cumin
  • ½ Tsp Coriander 
  • ½ Tsp Salt and Pepper
  • 4 Tbsp Fresh Cilantro
  • 4 Tbsp Fresh Parsley
  • 4 Tbsp Fresh Scallions
  • 4 Tbsp Fresh Basil
  • 4 Tbsp Fresh Microgreens (of your choice)
  • 2-3 Tbsp Sesame Seeds 

Instructions:

  1. Place 1 cup of whole dry lentils in a large mason jar with a sprouting lid with ¾ cup water and let it soak for 8 hours, all day.
  2. Once the 8 hours are up, drain the water out well and turn the jar on its side giving the lentils some space to start sprouting. Let them sit like this, turning on occasion for 24 hours or until they have sprouted.
  3. Cook the brown rice and quinoa and let cool.
  4. Add all of your ingredients including the sprouted lentils into your food processor and pulse until combined well. Do not over pulse as the batter can become too pasty and wet. You want it to be blended just enough to be easy to form burgers with.
  5. Take a taste and add in salt, pepper or any other ingredients if you feel it could use a bit more flavor to it.
  6. For the burgers, you will want to form them with your hands and make any size burger you choose, whether large or small. I chose small to medium so I would have more burgers.
  7. For these burgers you can grill them, cook them in a skillet or the oven. I chose to cook them in the oven.
  8. Prep your oven by turning the heat to 375. When forming your burgers, place them on a baking sheet with a piece of parchment paper and add sesame seeds on top of each.
  9. When your burgers are ready, place them in the oven for 30 minutes, or until browned on top.
  10. Once ready, get out your buns and any toppings you choose to add to it and enjoy these amazing & healthy burgers!!! Of course you don’t want to forget your FRESH MICROGREENS for a lovely garnish on top! :)
